We've enjoyed some delicious food this weekend, including pork, apple & celery bake, sausage and bean casserole and a tasty roast chicken dinner which provided some leftovers for a chicken & white wine risotto and a chicken and veg chow mein. Our family favourite, which was a big hit with all four of us, has to be my homemade lemon chicken wraps with tomato & chilli cous cous. It was delicious and complimented the lovely sunny bank holiday weather we were treated to.
- British Chicken Breast Mini Fillets
- 1 Lemon, zest & juice
- 1 Red Onion, thinly sliced
- 1 Yellow Pepper, thinly sliced
- Plain Tortillas
- 1 Little Gem Lettuce, leaves torn
- Cous Cous
- 1 can of Chopped Tomatoes
- Fresh Coriander, leaves torn
- Sour Cream & Chive Dip
And from your store cupboard;
- Oil
- Garlic, 1 clove finely chopped
- Chilli powder
- Ground Black Pepper
This recipe will serve 4 people and takes around 20 minutes to cook, including prep. It costs just £2.08 per portion!
Heat 2tbsp of cooking oil in a large frying pan. Add the chicken, lemon zest and juice, garlic and season with ground black pepper. Cook for 2-3 minutes, or until the chicken is sealed, then add the red onion and peppers. Fry for around 7 minutes or until the chicken is cooked through.
Meanwhile, place 200g of cous cous into a heat-proof dish. Add 300ml of boiling water then cover the dish and leave to stand for 10 minutes.
Heat up the tin of chopped tomatoes, adding the chilli powder, and simmer for around 5 minutes in a small saucepan.
When the chicken is thoroughly cooked, remove from the heat and mix through the fresh coriander leaves. Remove the cover from the cous cous and use a fork to break apart the grains. Mix through the chilli tomato mixture.
Heat the tortillas for 1 minute in the microwave (or under the grill for 30 seconds a side). Spoon some of the lemon chicken mixture into each tortilla along with a handful of torn little gem lettuce leaves and a spoonful of sour cream & chive dip. Wrap them up and serve alongside the tomato & chilli cous cous. Tuck in and enjoy.
